In the beginning…
Jarrod and Tracy have had an affinity for Italy and all things Italian since they were newly in love and blindly bike-toured all over Italy in 2010. In their mid-twenties, biking and on a budget, they found that the best bang for their buck when it came to meal times were ‘Primi Piatti’ (first courses) at restaurants, which always included fresh-made pasta with delicious sauces and often risotto or polenta. Pasta and grab & go ‘panini’ (pressed sandwiches) sustained them for the month of cycling and wandering through a country where food is celebrated and also taken very seriously. Since then, they have returned to Italy on many occasions, each time gathering new ideas and recipes to bring home.

Jarrod, a Durango resident since 1999, has 20 years of culinary experience and 11 years as a restaurant owner in Durango. Jarrod is passionate about using fresh, seasonal ingredients from local farms, and maintaining good relationships with the community. His experience ranges from fast casual to fine dining. PRIMI bridges the gap with ‘elevated fast-casual’ and focuses on Jarrod’s favorite dish to make and enjoy: Pasta!

SOMMELIER
Tracy’s love of Italy and wine led her to guide seasonal bike tours in Italy’s wine regions for 5 years, specifically around Tuscany and Piedmont. Along the way her passion and knowledge of wine grew, and she completed her Level I and II Sommelier certification through the Court of Master Sommeliers, as well as the Certified Specialist of Wine certification through the Society of Wine Educators. In an effort to share the discovery of wine in a fun and inviting way, Tracy hand-selects interesting Italian wines for PRIMI and offers them by the taste and by the glass. The rotating wine list includes Tracy’s tasting notes and suggested pasta & salad pairings.
